Jenny Costa Founder and CEO of Rubies in the Rubble

Jenny Costa is the founder of Rubies in the Rubble, an award-winning, sustainable food brand known for making great tasting condiments that are Packed with Purpose. Jenny graduated with an MA in Mathematics and Economics in 2008 before working in the city for 2 years. However, having always had a heart for sustainability and good food, she left in 2012 to launch ‘Rubies in the Rubble’. She started making her first batches of relishes from surplus in 2011 and since then has been working with farmers and producers across the country to put surplus fruit and vegetables to good use.

 

Rubies in the Rubble was the first food brand to tackle the issue of food-waste in the UK. Rubies range of ketchups, mayo and relishes continue to win numerous awards for both taste and sustainability. They supply Waitrose, Ocado, Sainsburys, Coop, EAT, Marriott, Virgin Trains and many more.
